Rainbow Soup

Ingredients:

  • 1 large diced onion

  • Heaping spoonful minced garlic

  • 3 tbsp olive oil

  • 1 lb spicy Italian sausage

  • 1 lb ground turkey

  • 2 tsp salt

  • 2 tsp pepper

  • 2 tsp Italian seasoning

  • 3–4 large carrots, diced

  • 2 cans diced tomato

  • 2 cans Great Northern Beans

  • 3–4 small zucchini, diced

  • 1 cup shredded purple cabbage

Directions:

  1. Sauté onion and garlic in olive oil until fragrant.

  2. Add sausage and ground turkey (or other protein). Season with salt, pepper, and Italian seasoning. Cook until browned.

  3. Add carrots; sauté for about 2 minutes.

  4. Stir in tomatoes, beans, and 2 cans of water. Simmer — add more water if needed.

  5. Let soup simmer for at least 1 hour.

  6. Add zucchini 15 minutes before serving.

  7. Stir in or top with purple cabbage just before serving.

  8. Adjust seasoning with herbs and salt to taste.

Serving Tip: Excellent with homemade focaccia bread.
